Been a busy few past weeks here, we are in the process of finding a new house to move into, so we will be in a new place in the next couple of weeks! very exciting
Thought I'd pop on here and share a recipe that I am trying out tonight for my family and grandparents, they are over from Scottland at the moment and we have invited them around for dinner
Indonesian Chicken Hot Pot
Preparation time: 10 minutes
Cooking time: 10 minutes
Total time: 20 minutes
Serves: 4
Ingredients
Quantity Product
1 tbsp Maggi Sweet Chilli Sauce
2 Chicken breast fillets, thinly sliced
2 cloves Garlic, crushed
1 tsp Grated ginger
1/4 cup Crunchy peanut butter
2 tsp Curry powder
1 tbp Oil
1/2 Lemon rind, grated
4 cups Water
1 Red capsicum, chopped
2 pkt Maggi 2 minute noodles Chicken flavour
2 Shallots, sliced
1/2 cup Roasted peanuts or cashews
2 tbsp Chopped coriander leaves
Method
1. Heat oil in large saucepan, add chicken, brown well then remove from pan.
2. Add garlic and ginger, cook 1 minute. Add peanut butter, curry power and Maggi Sweet Chilli Sauce, lemon or lime rind and water.
3. Bring to boil, add chicken and capsicum, simmer 2 minutes.
4. Add broken Maggi 2 Minute Noodles Chicken Flavour and flavour sachet and simmer for a further 2 minutes, stirring occasionally.
5. Stir in green shallots, peanuts and coriander leaves and serve immediately.
Will let you know how it turns out!

Back again :)
thought I should update this blog, and I promise to blog at least once a week. Had a mind blank last time I came to post, so forgot, uh oh!
For those that love cooking, I have come across this naughty but VERY yummy site
I am a cook at heart, and love baking for my family, so I will share a few of my recipes, and meal plan etc... if anyone is interested in reading along, feel free to post your meal plans too, I love reading what people are planning for the week ahead

oops!
Oopsey, have neglected my blog for awhile! .. thats what happens when life gets a bit busy busy!
Hope everyone has had a great easter weekend! We had a good one, but the eggs lasted longer than I would have liked, my little munchkin is a HUGE fan of choccies, its like he has a sniff sensor, every morning.. it was the same "EGG PWEASE MUMMY" .. cheeky boy!
They are all gone now though, in his little tum tum!
But there is still a crunchie chocolate bunny hiding in the fridge for him later on.. shhh!

Phases
All children, even adults... go through phases of things, whether it be a fave sweater, or tv show, even food or place. We all have that special phase that we go through.
My Son, Heath. Has many, as most kids do...
He has grown out of Iggle piggle, teletubbies etc.. and is now onto cars, planes, LOVES soccer, helping cook, and when he has his TV time, he loves to watch Chitty Chitty bang bang, or roary the racing car, tractor tom.. and DORA
I bought tickets for him to the DORA live stage show, that is on wednesday, and he is VERY excited and it is the main conversation that has been going on for the past few days
its going to be fun to see the look on his face, and to see how he reacts to it all
Isn't it funny, that once you become a parent, that there could be nothing better than seeing your child have so much fun, and of course, I am looking forward to seeing my friends and their children enjoying the show

strange weather
The weather man has been playing tricks today, this morning it has been so gloomy and rainy...and then now its sunny and half the sky is blue and the other half is gloomy
Heath absolutely LOVED jumping in the puddles this morning though, how can you not enjoy watching children jump around in puddles, our dog arwen joined in, by running around in the mud too.. That was fun to clean up lol
This weather has made me crave fruit cake and coffee SO MUCH, over this past week, yummmm! Love the stuff
Better go hang the rest of my washing out whilst the sun is out

How it all started....
I am new to this blog business, so bare with me lol
Well where do I start, I guess I should give you a run down on my life, I was born in the UK, Sheffield and I had a very adventurous and exciting childhood to say the least, my parents were divorced when I was 4, and my mum met my dad, david.. who is my step dad, but I have called him dad for as long as I can remember) when I was 4 and my sister was 3 (Maisie, who is now 19) .. then we traveled to greece for a holiday, and soon after that my sister Mabelle-Rose (now 14) was born, and a few years after that my mum and dad were married and then we all moved to scottland, where my brother Jake (now 11) was born.
Photo below is a photo of my parents .. and the second photo is of my siblings and I (and heath)
Lots of memories were made over there, and the UK is always close to heart for me, as our family is over there still, apart from our immediate family, and my uncle Mike.
We moved to Australia when I was 8, and we have always lived in the brisbane area, LOVE it here....
I went to school as normal, and when I hit 15, I started the rebellious stage, as most teenagers do. I won't call it a mistake, but I faced a "challenge" once I hit 16, hung around the wrong people, and soon fell pregnant with my son Heath... I think it was one of the most challenging years of my life, but I wouldnt have done it any different, I am VERY lucky to have been blessed by such a sweet little boy, and Heath is such a little character, he really is.
I had ALOT of support from family and friends, and one friend that I always tell everyone that helped me the most, was my best friend danae (see below) who really did help me get my head around everything. Love her lots x
I then was a single mum until I was 19, and met my partner Jason, and we have been together for a year now, and I love him to bits. As does Heath (below is a photo of Jason, Heath and I, and our dog Arwen)
